Quick Cheesy Tacos with a tasty street corn Side!

We love good tacos in this house! And these are super easy, flavorful, and delicious for a quick meal!

Servings: 4 (8 taco)

Taco! You'll need:

1lb ground beef

1 Small Onion Diced (optional if you like them in your tacos)

2 Tsp Chilli Powder

1 Tsp Garlic Powder

1 Tsp Onion Powder

1 1/2 Tsp Cumin

1 Tsp Cayenne (optional)

1 Tsp Smoked Paprika

Salt and Pepper like normal

Corn Tortillas ( 8 for this recipe )

1 cup of water

Cheese of your choice (we use a Mexican blend) for shell and filling( eye ball it lol )

Cojita Cheese

1 Tbsp Neutral oil (canola) I've also used avocado oil as a great and healthier option.

Sauce for tacos!  You'll need:

1 Cup Sour Cream

1/2 Cup Mayo

2 Tbsp favorite hot sauce( for these i used Cholula )

1 Tsp Cumin

1 Tsp Garlic Powder

1/2 Tsp Salt

Street Corn! You'll need:

4 Corn on the cob (Cut off the cob)

Cojita Cheese

1/2 cup of mayo (we use Hellmans)

1 1/2 teaspoon of Salt

1/2 teaspoon of Black Pepper

1 Tsp Chilli powder

1 1/2 teaspoon of Tahin (more if you like it like I do)

1/2 teaspoon of cayenne (optional if you like a little more spice)

2 Tbsp UNSALTED butter

1. Start by browning your ground beef in a medium pan on medium high. Breaking it up as you go.

2. When almost all pink is gone, add seasonings on top of meat. Then add 1/2 the water and stir well. Add more water if its not enough to get seasonings covered on the meat.

3. Reduce heat to low and add a lid. Cook for 8-10 mins, stirring occasionally.

4. While the meat is simmering in the pan, get a small pot. Add the butter, corn, salt, pepper, cayenne and chilli powder. Stir and cook as normal.

5. When Corn is cooked add the mayo and stir to combine. Then remove from heat.

6. Mix all of your sauce ingredients in bowl, and sit aside.

7. For this step a countertop griddle is best but a pan can work the same. Get your griddle hot 🔥 and add the oil. When the oil is nice and hot add about 1/4 cup of cheese directly onto the griddle. Lay 1 tortilla on the cheese. Add meat and onion mixture with Cojita Cheese and a tiny bit of your Mexican cheese. Then sauce on top of cheese. Wait about 1 minute and then fold your tortilla over with meat inside.

8. Cook about 2 more mins on each side to crisp and let cheese cook onto shell. Remove from heat and place onto paper towel lined plate.

9. Repeat steps 6 and 7 for the other tortillas.

Back to the corn!

10. Plate the corn on the side of the plate, and add your cojita cheese on top. Then add the Tahin on top of the cheese.

Plate your tacos beside the corn and enjoy!

Quick tips and ideas!

I don't like cilantro but if you do it would add a nice freshness!

Squeeze 1/4 lime over the corn to add amazing flavor!

When cooking the tacos watch for the cheese to brown on the edges, that will tell you it's ok to flip!

Avocado is a great addition also.

Let me know what you think! Enjoy!
